- 2 goose fillets
- 500g red cabbage, shredded
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 apples, peeled and diced
- 50g butter
- 2 tablespoons red wine vinegar
- 1 teaspoon sugar
- 1 teaspoon ground cinnamon
- Salt and pepper to taste

- Preheat the oven to 180°C.
- Heat a large skillet over medium heat and melt the butter.
- Add the onion and garlic to the skillet and sauté until translucent.
- Add the shredded red cabbage and cook for 5 minutes, stirring occasionally.
- Add the diced apples, red wine vinegar, sugar, and cinnamon to the skillet and mix well.
- Cover the skillet and let it simmer for about 30 minutes, or until the cabbage is tender.
- Meanwhile, season the goose fillets with salt and pepper.
- Heat another skillet over high heat and sear the goose fillets on both sides until browned.
- Transfer the seared fillets to a baking dish and place them in the preheated oven for about 15 minutes, or until they reach your desired level of doneness.
- Remove the fillets from the oven and let them rest for a few minutes before slicing.
- Serve the sliced goose fillets with the red cabbage mixture on the side.
